Super-Fast Summer Recipe
“Hey! Hey! What’s for dinner? Can we have pizza? Oh oh! Or hamburgers?” Oh, how the questions never end! My niece and nephews are staying over this week and their goal is to eat fast-food as much as possible. Sadly (for them), that will not be happening. They can have pizza and hamburgers, but it will be the healthy homemade version (thanks to Cooking Light).
- Summer Squash Pizza — I like to add diced chicken breast on top of my homemade pizzas.

- Parmesan and Pine Nut-Crusted Oven-Fried Chicken
- Omelet with Summer Veggies
“Salmon? You want me to break my budget to buy salmon?!” If this is what you’re thinking, then rest assured, that will not be happening. Frozen salmon works just as well as fresh salmon and only cost a fraction of the price. I bought a pound of frozen salmon at Aldi’s the other day for under $5! Check your local grocery stores to see what great deals you can find.
