Okay, I agree with the ham part, but I’m not so sure I want to try green eggs (yet). Today our main star is ham! You can make so much with a simple ingredient. Who would have thought?

Split Pea Soup with Ham

Ingredients

• 1/4 cup olive oil
• 1 large onion, finely diced
• 2 celery stalks, finely diced
• 2 carrots, finely diced
• 1-pound bag split peas, rinsed and picked through
• 1 1/2 pound smoked ham hock
• 2 quarts chicken stock, water, or combination
• Salt and freshly ground black pepper

• 2 teaspoon(s) Dijon mustard
• 8 slice(s) (about 4 ounces) thinly cut cooked ham
• 2 ounce(s) (1/2 cup) Jarlsberg light cheese

• 2 Tbsp.  KRAFT Shredded Cheddar Cheese

• 3 slices  OSCAR MAYER Deli Fresh Oven Roasted Turkey Breast
